In Switzerland, around the city of Gruyère, you can find traditional cheese makers. They never changed the recipe. With twenty six cows, this one produces two cheese wheels of 22 kgs each per day. The big copper pot you can see on the photo, is 103 years old. A wonderful day spent with him. Link for Etivaz cheese. Enjoy :-)
