Rick Sammon from an article for Outdoor Photographer suggests "multi-segment metering is a good choice in many situations, because it evaluates the different areas of the scene and selects the best exposure."

More information on the other various modes, such as Center-Weighted Average, Spot Metering, Partial and Autoexposure Lock ... further into the article. And in particular, where each has it's best uses and applications.

Once again, cambridgeincolour.com provides a very succinct, concise explanation (with pictures!! :oD ) and tutorial on "Camera Metering and Exposure".
