Ok,first off, my only editing tool is Gimp.

The effect i'm hoping to acheive is a darkened or subdued background, with the main subject in full color. I'm 100% noob to any photo editing,so any help is appreciated.

one word for'ya = masking.

cut out the foreground subject matter you want to focus on. create a copy of the background scan and either desaturate it or turn it to greyscale in the colour mode option. copy the grayscale image and paste it under the cut out forground or desaturate the background using the mask you made to protect the coloured up foreground.

dont know anything about gimp, but you'd have to make a selection of either the subject, or the background, then make a new layer of the subject (if thats how you made the selection) then desaturate the layer below it, or select everything around the subject, and just desaturate it
