I love mushrooms, not only photos of them, but eating them, so I figured some you other 'shroomheads' would enjoy this recipe...so here goes:::::::::::

Mushroom Minestrone

Ingredients:

Serves 6

2/3-cup dry cannellini beans
Prosciutto bone or ham hock
1 onion, cut in half
1 celery stalk
1 medium carrot
1 bay leaf
1 cup extra-virgin olive oil
6 oz. button mushrooms, cleaned and quartered
2 tsp. porcini powder, divided
1 tsp. Gray salt
brussels sprouts, blanched and quartered
1/2-cup carrots, diced small
1/2-cup onion, diced small
2 oz. prosciutto, diced small
2 cloves garlic, minced
2 tsp. fresh thyme leaves
1 14 oz. can whole tomatoes
2 cups chicken broth
1/2-cup Raditori pasta
2 cups fresh spinach

Directions:

1. Cover dried beans with cold water.
2. Bring to a boil, cover, remove from heat and

let stand 1 hour, then drain.
3. Return beans to large pot with 2 quarts

water, prosciutto bone, onion half, celery, carrot

and bay leaf.
4. Simmer gently, uncovered, until beans are

tender (about 1-1/2 hours).
5. Allow beans to cool in broth.
6. Heat half the oil in a large pot and sauté

mushrooms with half the porcini powder and half

the salt. Do not move the mushrooms until they

have caramelized on the bottom.
7. When the bottoms are caramelized, toss

them and continue to cook for about 5 minutes.
8. Remove from pan and set aside.
9. Heat remaining oil in pot.
10. Sauté Brussels sprouts with remaining salt

until caramelized (about 5 minutes).
11. Remove from pan and set aside.
12. In the same pot add carrot and onion and

cook for 5 minutes.
13. Add prosciutto, garlic, porcini powder and

thyme.
14. Add tomatoes and chicken broth, then add

beans and bring to a boil.
15. Add Radiatori, reduce heat and simmer until

cooked.
16. To serve, spoon Brussels sprouts,

mushrooms and spinach on top of minestrone in

soup bowls.

Chef's note: When you buy dried porcini

mushrooms, place the broken pieces or bag dust

into a clean coffee grinder and make your own

porcini powder.

The best recipe I have I will post shortly....I actually made it up myself and it turned out sooooooooooooo yummy, I'll dig it up and post it after a while...

Moose Feast:

Ingredients:
Enough moose steaks to bloat all your buddies
Lots of onions
Pounds of butter
Enough mushrooms to conceal the steak
one Canadian beer
sprinkle of salt n pepper

Directions:
throw ingredients in a 50lb cast iron frying pan and cook till it stops quivering

Somehow I knew Darryl would know what to do with mushrooms.
I take mine raw out of the fridge lightly salted so they hardly make it into a dish, but I'll watch for some recipes, maybe I'll try cooking them too.
It really quivers?!

Hey Lauren...here ya go with the best stuffed shroom recipe I have...YUMmmmoooooh!!
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
About 1 lb Portobello mushrooms(around 24 medium)
1 pkg cream cheese (3 oz)softened to room temp
1 small onion, chopped fine
1 tsp garlic powder or 2 cloves garlic, chopped real fine
1/4 cup grated Parmesan(save a bit to sprinkle over top of shrooms)
1 tsp dried basil leaves or 1 Tbsp fresh basil, chopped
1/2 c bread crumbs(this is optional)
Chopped fine mushroom stems

Mix all this together gently. then stuff this mixture into each mushroom. Place them all into a backing dish, sprinkle Extra Virgin Olive Oil over the top, then bake in 425 degree oven til baked thru, about 15-20 min.

This is wonderful for shroom lovers...serve with anything else, such as a salad..or just simple a glass of good wine ...Enjoy!!

Ok Darryl..I think we should all meet in Oregon and have a true Moose Feast...I'm moving into the countryside within two months...and will have plenty of room for all of you to have this
'ShroomFest'..............yahooooo! Can't wait...but there is ONE condition...you EACh have to bring some mushrooms..Is that a deal??!!
And I happen to know Canadian beer is one of the worlds BEST!!!!!

in an iron skillet warmed on a medium high heat
add---> 1/4 C extra virgin olive oil, 1/4 C balsamic vinegar, a sprinkle of salt and pepper, 1/2 cube of unsalted sweet cream butter, italian spices to taste, whole crimini mushrooms or baby portabella's
cook until reduced sauce, stirring often...if the mushroom "crisps" on one side, it's ok...mostly crystalization of the sauce...
can be served on a steak with bleu cheese, or as a side dish, or chopped finely and added to an hors deuvre...such as a sliced baked baggette with olive oil and melted goat cheese

Lemony Button Mushrooms

2 lemons, juiced
1 tablespoon extra-virgin olive oil
Coarse grained salt and cracked black pepper
3/4 pound white button mushrooms, trimmed and quartered

In a medium non-reactive bowl, whisk together the lemon juice, olive oil, salt, and pepper. Taste and adjust seasonings. Add the mushrooms and let stand in the refrigerator at least 1 hour or overnight. Enjoy however you wish....

not a Mushroom recipe in itself, however it is yummy and DOES feature mushrooms.
Needed:
2 8oz tubs of pina colada yogurt
1 lime
1 shot tequila
chili powder
black pepper
whole mushrooms
fresh tiger shrimp, peeled and de-veined (about 30)
red, yellow, green bell peppers cubed
pineapple chunks

in a bowl mix tequila, yougurt, pepper, chili powder, lime zest, and squeezed lime juice
chill 1 hour
mix again
dump in shrimp and mushrooms and bell peppers (DO NOT ADD PINEAPPLE TO MIX)
chill 2 hours, remove shrimp, mushrooms, peppers
in skillet on medium heat with olive oil and a dash of sesame oil, add mushrooms
cook about 10 minutes, add bell peppers cook another 5 minutes, add pineapple chunks
cook 2-3 minutes, stirring the whole time
add shrimp, cook 3 minutes tops NO LONGER THAN 3 minutes...time it if you have to
in rice cooker or pot, cook mixture of basamati and jasmine rices til sticky rice
serve shrimp mix over the sticky rice

Needed, a few large Portabella mushrooms, caps only (SAVE stems)
one salmon fillet, skinned off, bones removed
salt and pepper
riccota and feta cheeses (1 tub each), shredded pepperjack or swiss (depends on your tastebuds)
olive oil
1/4 onion chopped fine
garlic clove crushed

in a skillet, on medium heat, warm olive oil.
Put on backs (stemside up) portabellas

in seperate bowl, shred salmon fillet, add cheeses, salt and pepper to taste
add crushed garlic clove and chpped onion, stir until all is mixed and well incorporated together.

Flip Mushrooms and cook for 1 minute on stem side, then re-flip
add salmon and cheese mix by spoon dropping into mushroom caps til filled

in a 375 oven place skillet with mushrooms and mixture, cook for 10 minutes or until cheeses look a little melty,

Remove from oven, drizzle lightly, olive oil over cheeses and mushrooms

Serve hot.
