I was just wondering what people set for the pixels per inch when making a new image in photoshop, or if it even matter, which I'm sure it has some significance.....

It only matters if you are going to make a print of it eventually, and even then it's easy to change after the fact. If an image is only going to be on your monitor then the only metric that matters is number of pixels.

but for that matter, 72 is pretty much default when it's web-only... 300 for print is common.
