so I really meant to mention this the other night… as I was walking home… I see this guy walking ahead of me doing a weird waddle kind of walk as he strolled along holding his girlfriends hand. It took me a moment or 2 to recognize… it was the baggy jeans gone wrong phenomenon.

He HAD to use that waddle to keep his pants on since they weren't covering his rear @ all and were so low that the bottoms were scrunched up slinky style on top of his equally oversized shoes. I walked along behind them for a couple of blocks in semi-fascination waiting to see if they were gonna fall off, but nope, he's mastered it.

Nonetheless… I really wanted to speed up a bit, put a hand on his shoulder and say… "You know… there''s a reason they call it a WAISTband" 8•P

What ....no camera ? What kind of a Caedesian are you ....to be caught with your photo op pants down ....so to speak ?? LOL

Hmm, maybe someone is 'muffin-deprived?' Could that be the reason for the 'love?' Here ... have a Cranberry Explosion or two, and yum ... are they ever goooo ooo ooood.

So, into the oven goes my perfectly seasoned mix of fresh vegetables tossed with a good good olive oil ... love roasted vegetables. All caramelized, sweet ... flavours mixing, accenting and complimenting one another. Now ... here's the thing ... do not go Caedesing without the use of a timer. :o(

(*hits speed dial number 3*) ... ahh, yeah ... it's me again Mary ... the usual pie please.

RECIPE PLEASE, LES! I want the recipe for those veggies! pleeeeease!

'K, it is my oven version of "Ratatouille."

Here is the 'real' version:

1.6 kg tomato - peeled, seeded, and juiced.
(2) Eggplant
(2) Zucchinis
(2 - 3) Green Bell peppers
1 kg onion
6 Cloves garlic
"Herbes de Provence" (basil, thyme, parsley)
Olive oil
Salt, pepper to taste.

Preheat oven to 400°F. Spray two cookie sheets with olive oil or another vegetable oil spray. Put the zucchini and eggplant slices on the cookie sheets. Brush very lightly with olive oil, and bake until slightly brown on each side.

In a skillet, cook onions and peppers slowly in 2 T. olive oil for about 10 minutes. Stir in garlic, and season to taste. Slice tomato pulp into 3/8-inch strips. Place tomato slices over onions and peppers. Season with salt and pepper. Cover the skillet and cook over low heat for 5 minutes. Uncover, baste with the tomato juices, raise heat, and boil for several minutes, until most of the juice has evaporated.

Put 1/3 of tomato mixture in the bottom of a casserole. Sprinkle with 1 T. parsley. Arrange 1/2 of the eggplant and zucchini on top, then half of the remaining tomatoes and parsley. Put the rest of the eggplant and zucchini, and finish with the remaining tomatoes and parsley. Cover and simmer for 10 minutes. Correct seasoning. Raise heat for 15 minutes, basting if dry. Serve cold, warm, or hot.*

Add some lightly toasted French stick bread ... and yum.

What? You want the recipe that I follow? I don't think so, lol. That would include roasting the eggplant and zucchini beyond recognition and well beyond salvagable. My version is appropriately named; "Crapatouille." :oP

p.s. You can finish this whole thing in the oven. Turn the oven down to 350 and add the additional vegetables along the way starting off the process in a large roasting pan. Me hates to wash pots and pans.
