The only way I've found to not clip the red channel and lose color data is substantial underexposure when shooting, then brightening in post work. The ring flash also evens out the exposure and largely eliminates deep shadows in foreground objects, letting more of the color come out. Ideally, the camera makers would allow selective control of the RGB channels that display color. My Canon 60D always clips the red channel first and I suspect it's pretty widespread among the other camera brands too.
