This is one of the common food recipes in the Middle East, not just in Egypt. Basically it is wheat flour cocked on water steam and added some coked vegetable. You may eat it with sugar powder on top of it as dessert.

Hello Khaled...once again an interesting photo. I love the little wagons//carts they use there. And it sounds like a nice basic recipe to give warmth and a smile. And to add a spot of food to a awaiting belly. I appreciate so much your postings. THey true life, and show people in their own environments. I wish more of the photographers would do that. Here in America you have a ask a person permission to print or show their picture....crazy world isnt it? Thank you for another fine photo my friend!!

Hi Khaled and good evening. The cart looks home-made to me. Do these people do very well at selling food on the sidewalk like this? What are the large pieces of cement block there for? Is this to show where to park your car? There are so many things in this photo that is totally different from life in the US . Funny how people and places can be so different but we're all trying to do the same thing- survive. Thanks Khaled..... Eileen

So is the Koskos that large white mound with dots (they look like sultanas to me) on it? Does it taste similar to anything I might have heard of? I presume it is unrelated to "Couscous"...

Verena; I appreciate your postings and comments on my photography. it still hard to take a photo of someone over there in Egypt, people still wondering what are you doing? where there pictures will go. if they knew what are you doing they will ask you for a printed copy of it. which is nice!

foofoo; The cart is made by local carpenters who manufacturing these type of design since hundreds of years. The cement blocks is not a good idea in the street of Cairo some area people leave it to reserve the spot for parking. There are still more thousands of photos to shot over there which I am willing to take.

Samatar, I do not know Sultanas recipe. But yes it is the big pile on the cart covered by transparent plastic sheet. I never ate from these carts all my entire life there. But i ate at home. My mom was doing it every other week or more.
