find yourself a tree-lined road .. colorful trees, hopefully .. set your lens to wide angle .. and place your camera on your dashboard (or hold it) pointing as straight forward as possible .. experiment with shutter speeds .. but a quarter of a second is a good starting point

Yes - these kinds of shots are fun to do. Those big green highway signs shove a lot of headlight back at your camera too. Cool!
