It is a huge help for foreigners if you don't know what to eat, at least you know what looks good and you can choose easily. The other reason why they have this kind of display everywhere, because the most restaurants have only Japanese menu card. That's impossible for us to understand anything at all. The wax copies generally show the components before cooking. Good appetite...(Japanese never say this.)
