As an example of an animal portrait I don't think there is anything more technically spot on than this shot. DOF field is genius good, composition is perfecto balanced. For me this particular subject seems to lack personality or individuality but perhaps I simply don't see enough deer to know, not real common in Australia. :)
Think about the photo before and after, never during. The secret is to take your time. You mustn't go too fast. The subject must forget about you. Then, however, you must be very quick.
